One of Bryce’s favorite meals growing up- now with my own spin (& some added vegetables).
This is more of a method than a recipe, but alas- it’s a good one! The beauty of it is that you can do as much or as little from scratch as you have time for.
1. Add equal parts rice and chicken stock into a 13×9.
2. Add a can of cream of something soup OR make a roux of your own with whatever you have on hand like I did.
3. Add broccoli, chicken (rotisserie works if you’re in a pinch!), and plenty of spices (a pinch of cayenne takes it up a notch- you won’t notice it’s there!)
4. Top with bread crumbs or plain parmesan.
5. Bake at 375 until rice is done. You could even use precooked rice and just reheat it all together- I’ve done both!
